1 cup onion
1 cup celery
4 cups diced potatoes, cubed
Cover with water and ADD chicken bullion (2 to 3). Boil until tender 10 to 15 minutes.
Mix together in another pan:
3/4 cup butter
3/4 cup flour
1 1/2 teaspoon salt
Quart of half and half
dash of pepper and sugar to taste
Cook until it thickens. Pour all ingredients together UNdrained. Use milk to thin as needed.
ADD 1/2 cup bacon bits. This soup is a family favorite!
(Can also be varied to make clam chowder by adding canned clams instead of bacon bits.)
