Peanut butter fingers

1 cup of butter (2 sticks) 1 cup white sugar 1 cup brown sugar 2 eggs 2/3 cup of creamy peanut butter 1 tsp soda 1 tsp salt 1 tsp vanilla 2 cups of flour 1 1/2 cups of oatmeal Mix butter and sugars together. Blend in eggs, peanut butter and vanilla. Stir in dry ingredients. Spread in large cookie sheet Bake at 350 for 15-20 minutes. After baked, pull it out Of the oven and pour 2 cups of chocolate chips on top And let melt. Take a knife and spread Melted chocolate Chips. Let cool Frosting: Mix together the following 2 cups powder sugar 1/4 cup of milk 1/2 cup of creamy peanut butter Spread on top After its cooled and cut into squares. -from Heather's grandma Gladys Rasmussen

Apple Crisp

Topping:
1/2 cup flour
1/2 cup brown sugar
1/2 cup rolled oats
1/8 tsp baking soda
1/8 tsp baking powder
1/8 tsp salt
1/4 cup butter

 Empty 1 quart bottle of apple pie filling into a pan (8x8 for 1 bottle, 9x13 for 2 bottles). Melt butter and add all other ingredients. Stir well until all dry ingredients are moist. Crumble topping over pie filling. Bake at 350 for 45 minutes.

 *If you like lots of topping: double recipe for each bottle of pie filling used.

Grandma Johnson’s Oatmeal Cookies


Beat together until creamy:
2 c shortening
1 ½ c brown sugar
1 ½ c sugar

Add:
2 T vanilla
4 eggs
Beat again.

Mix together in separate bowl:
3 c flour
2 t salt

Also in separate cup mix:
2 T hot water
2 t baking soda
Stir until soda is dissolved.

Add ½ flour to cream mixture, then ½ soda waterMix.
Add other ½ flour and soda water. Mix.

Add 4 c quick oats.  Mix.

Add chocolate chips or nuts or raisins if desired.

Drop by round teaspoon on greased cookie sheet.
Bake at 350 for 10-12 minutes.  
Enjoy!

*This makes a large batch of cookies.  The dough freezes well if you don’t use it all, or you can ½ the recipe too!

Cookies Carmel Date


1 cup shortening                   
4 cups flour                      
2 cups brown sugar             
1 tea. Soda sifted with flour
3 eggs            
2 tea vanilla

Beat shortening and sugar, add eggs, vanilla.

Add flour and soda, beat until blended.

Roll in a 2 ½ in roll, wrap in saran and freeze

                           Filling

1 cup brown sugar                    
¾ cup water
1 cup dates chopped                
1 Tab. flour
1 cup nuts chopped

Cook water, sugar, flour and dates until

thick.  Add nuts and chill.

Slice dough abut ¼ inch thick. Place on cookie

tray,  put about 1 Tab. filling on top, then  another

slice of dough on top.

Cook 350 for 10 minutes

Grandma Baugh's Sugar Cookies


4 cups flour    
1 tsp baking powder 
½ tsp baking soda
½ tsp salt  
1 cup soft butter or margarine
1 1/2 cups sugar 
1 egg,   
½ cup sour cream    
1 tsp vanilla
½ tsp almond extract

Beat butter, sugar, egg until fluffy. Beat in sour cream and extracts.  Add flour, baking powder, baking soda and salt. Chill several hours or overnight. Grease cookie sheet, roll out and cut, either thin or thick. Cook 375 for 10 min, less if you like them soft.

Beth's Cream Pie


2  small pkg of instant jello vanilla pudding mix
2 ½ cups milk
1 8 oz cool whip
or
l  large instant vanilla pudding mix
1 ¾ cup milk
1 8oz cool whip
Add bananas or coconut,  put into
cooked pie shell . 

Grandma Baughs Lemon Pie


4 Tab. cornstarch             
1 Tab. butter
1 cup sugar                        
1 ¼ cups boiling water
2 eggs
1 large lemon  and a little grated rind

Boil water  in a heavy kettle. Mix cornstarch and
sugar in dry bowl and add to boiling water, boil
for  5 minutes.  This is very thick, so turn the heat
down to simmer. Add butter and lemon. Take from
stove , add a few tablespoons full of hot mixture
to eggs while beating, then fold them into the
pan.Cool and pour into pie shell. Put powdered
sugar in bottom of pie crust first.
