1 cup sugar
1/2 cup shortening
1 teas salt
1 1/4 teas soda
2 cups flour
2 eggs slightly beaten
3 ripe bananas
1 teas vanila
1/2 cup chopped nuts (optional)
Cream sugar and shortening together. Add eggs. Combine flour, salt and soda. Beat and add smashed banana, vanila and nuts. Divide batter into 2 greased and floured bread pans*. Bake at 325 degrees for 45 minutes. Cool on baking rack. Frost with vanila frosting (optional).
Tips: *Use disposable tin bread pans for more even cooking.
