2 lbs red potatoes, peeled and cut into 1/2 inch cubes
3/4 cup finely chopped carrots
1 medium onion, finely chopped
3cups chicken broth
1/2 tsp salt
1 cup whole milk (or half and half)
1/4 tsp black pepper
2 cups shredded cheddar cheese
Place potatoes, carrots, onion, broth, and salt in slow-cooker. Cover and cok on LOW for 4-6 hours. Stir in milk or half and half and pepper. Cover and cook on HIGH for 10 minutes. Turn off slow-cooker. Stir in cheese until melted.
