1 lb mild Italian sausage
1 cup chopped onion
2 garlic cloves, minced
5 cups beef broth
1 cup water
1 14oz can diced tomatoes
1 cup grated carrots
1 8 oz can tomato sauce]
1/2 tsp basil
1/2 tsp oregano
1 1/2 cup dredded zucchini
1 med pepper, chopped
8 oz frozen tortellini
In a skillet, brown sausage, onion and garlic, drain grease. Transfer to slow-cooker. Add broth, water tomatoes, carrots, and tomato sauce. Cover and cook on LOW for 5-6 hours. Stir in basil, oregano, zucchini, peppers, and frozen tortellini. Cover and cook on HIGH for 1 additional hour or until tender.
