Grandma Baughs Lemon Pie


4 Tab. cornstarch             
1 Tab. butter
1 cup sugar                        
1 ¼ cups boiling water
2 eggs
1 large lemon  and a little grated rind

Boil water  in a heavy kettle. Mix cornstarch and
sugar in dry bowl and add to boiling water, boil
for  5 minutes.  This is very thick, so turn the heat
down to simmer. Add butter and lemon. Take from
stove , add a few tablespoons full of hot mixture
to eggs while beating, then fold them into the
pan.Cool and pour into pie shell. Put powdered
sugar in bottom of pie crust first.
