Cheezy Potatoes

2 -24oz pkg frozen potatoes, shredded or southern style
2 cup cream of chicken soup
2 cup sour cream
2 cups grated cheddar or mixed cheese
1/3 cup chopped onion (I use dried onion 1 1/2 Tablespoons)
1/3 cup melted butter or margarine

Combine all ingredients in a large bowl. Mix well. Pour into greased 9x13 baking pan. Sprinkle cheese over top and cover with FOIL. BAKE at 425 degrees for 1 hour. Serves 16-20

Variation: Bake at 425 degrees for 40 minutes. Remove from oven stir well. Sprinkle 2 cups of crushed cornflakes combined with 2 Tablespoons of melted margarine over top of potatoes. COVER and return to oven for 20 additional minutes.
