1 cup sliced almonds
1 cup sugar
1 pkg baby spinach
1 apple, diced
1 cup craisins (60z bag is fine)
Melt sugar in a pan on stove. This takes some time and must be stirred constantly and watched or it can burn. When sugar is liquified dump in sliced almonds and stir to coat. Keep pan on low heat while you stir in nuts to keep sugar thin. SPREAD AS THINLY AS POSSIBLE on greased cookie sheet. Let cool. Break into pieces for salad. (I put them in a plastic bag and kind of roll and hit them with a rolling pin) You are now done with the hardest part of the salad! Toss spinach, apple, craisins and almonds together. Pour the amount of dressing desired over salad and toss again right before serving.
DRESSING:
4 Tablespoons white wine vinegar
5 Tablespoons sugar
2 teaspoons salt
1/4 teaspoon pepper
Heat on stove just until sugar is melted. Remove from heat and add to 1/4 cup vegetable oil. Shake vigorously (I like to blend it in a blender. It keeps it from separating so fast) Let cool.
